[origin: WO9905457A1] The present invention relates to a cooking and/or baking oven mainly intended for bread that comprises baking space (3) which is located in a housing and which is coated with heat-resistant accumulation members (29) for accumulating heat and moisture, wherein said baking space comprises a loading opening that can be closed with a door. A heater or heating device, that can for example be made in the shape of a gas burner (31, 32), is placed within said baking space (3). This heater or heating device for the baking space (3) includes at least one radiating member, such as a burner (33, 34), which has an extended surface area and is designed for producing and emitting thermal radiation essentially in the infrared spectrum. An control device is used for monitoring and controlling the temperature during the whole baking process.
