[origin: WO9902630A1] The invention concerns a method for eliminating for eliminating non-hydratable phospholipids and/or polyvalent metals from a fatty substance, consisting in a step of mixing the fatty substance with a monosodium or polysodium polycarboxylic acid solution, the mixture being produced by pouring the aqueous solution into the fatty substance in the form of fine droplets or in micellar form. The aqueous solution advantageously also contains an electrolyte derived form a monovalent cation. Ethylenediaminetetraacetic (EDTA) salt is the preferred carboxylic salt which acts as complexing agent.
