[origin: EP1010501A2] The machine has a cutting head which is located on a base frame as well as a feed unit for the product. A holder (1) is provided on the cutting end of the food product so as to fix it in place. The holder can be drawn back with the feed unit away from the blade (11) of the cutting head so as to prevent food shreds from building up.
