[origin: WO9853080A1] The present invention provides methods for preparing nucleic acids encoding polyphenol oxidase (PPO), fragments and derivatives tereof. The present invention also provides nucleic acids encoding banana, tobacco or pineapple PPO, or antisense to banana, tobacco or pineapple PPO, fragments and derivatives thereof.
