L'invention concerne un procédé de fabrication d'un dérivé acide d'ose comportant sur la chaîne carbonée n atomes de carbone, caractérisé par le fait que l'on met en contact un dérivé acide d'ose à n+1 atomes de carbone comportant au moins une fonction α cétone, et/ou un de ses sels, avec du peroxyde d'hydrogène dans un milieu réactionnel sans régulation de pH.
