[origin: WO9954432A1] The invention concerns a method for preparing compounds having economic interest (called "compounds") comprising steps which consist in: a) culturing in fermenting conditions at least one micro-organism selected for its capacity to synthesise said volatile odorous compounds (called aromas), in the presence of a substrate comprising a residue derived from the distillation of fermentation products of plant parts, for example, vegetative organs; b) recuperating the resulting compounds.
