[origin: DE19820032A1] The invention relates to a method for removing cholesterol from liquid and dried egg yolk, which makes it possible to obtain liquid egg yolk, liquid whole egg, dried egg yolk or dried whole egg with a significantly reduced cholesterol content. Starting with the liquid or dried egg yolk, the lipid constituents and cholesterol are separated from the solid by extraction using an organic solvent. The cholesterol is separated from the lipid phase by a selective adsorbent on a saponine basis which is bound to an inorganic carrier. By combining the lipid fraction freed of cholesterol and extracting agent with the proteins freed of extracting agent and then homogenizing same with addition of water and/or dried egg white and/or liquid egg white, liquid egg yolk or liquid whole egg is obtained which is largely free of cholesterol and can be spray-dried.
