Abstract (en)
Manufacturing a food product comprises making a liquid or creamy material and a plastic material in different sections of a twin-screw extruder, extruding the plastic material as a cooked strip, cutting the strip into lengths and adjusting the amount of liquid/creamy material added to the cut strip. Independent claims are included for: (1) an apparatus for making a composite food product has a twin-screw extruder, a cutting device and a device adjusting a supply of liquid/creamy material; and (2) a food product made by the above method. Preferred Features: The liquid/creamy material encapsulates the cut cooked pieces, e.g. by co-extruding them.

Procédé et installation de fabrication d'un produit consommable composite par double extrusion, dans lesquels on prépare une matière consommable liquide ou pâteuse dans un premier tronçon d'un extrudeur bivis, on cuit-extrude une matière consommable plastifiable dans un second tronçon de l'extrudeur bivis séparé dynamiquement du premier, on obtient au moins un brin d'une masse cuite-extrudée, on le découpe en morceaux, on ajoute la matière consommable liquide ou pâteuse à la masse cuite-extrudée et l'on obtient des morceaux d'un produit consommable composite. <IMAGE>
