[origin: WO0040091A1] The invention concerns an apparatus for cutting longitudinally animal carcasses after they have been slaughtered. It consists of a circular rotary cleaver (2) provided with teeth or not, driven by a motor (7) and mounted at the end of an oscillating support arm (3) driven, by a cam (5) arranged under the end of the support arm opposite the cleaver, with a fast up-and-down movement so as to communicate to the cleaver a very quick stroke with slight amplitude on the spine (10) of the animal (11) to be cut up. The invention concerns the industrial and commercial field for making and distributing slaughtered animal products, and enables to provide an industrial product in equal portions by longitudinally cutting up the spine. It is mainly designed for treating pigs, but can be used for all similar quadrupeds such as calves, sheep or goats.
