[origin: WO0154773A2] The invention relates to a method and to an agent suitable for carrying out said method for extinguishing a heated or over-heated and/or burning oil and/or fat, such as is typically implied in deep fat fryer fires, using an aqueous alkaline solution. Said aqueous alkaline solution causes the partial saponification of the oil/fat and the formation of a floating, viscous and non-flammable separating layer that shuts off the supply of atmospheric oxygen to the burning substance. The method is particularly characterized in that the aqueous alkaline solution can be introduced into the burning oil and/or fat in a form in which it is chemically and/or physically bound to a binder and manufactured to a compact enveloped compound. Said compound is introduced into the burning oil and/or fat so as to be immersed, namely by throwing it into the oil and/or fat. The solution is released from the envelope while gradually evaporating the water, preventing fat explosions and saponifying the oil and/or fat.
