[origin: WO0210078A1] The invention concerns a bacterial composition, a method and an installation for pre-treating effluents loaded with organic fatty substances of animal or vegetable origin. The bacterial composition comprises mainly the bacterial strain of Klebsiella Oxytoca. The inventive method consists in: supplying a homogenising and/or conditioning tank (1) with effluents to be pre-treated, as they are being produced; activating a recycling circuit (2) between the latter and a biological reactor (3) to obtain a dilution rate of the fatty substances ranging between 0.400 h<-1> and 1500 h<-1> for an initial concentration in fatty substances of 1 g/l; in decomposing said fatty substances in said biological reactor (3) with said bacterial composition and in evacuating the pre-treated effluents towards a final treatment unit such as a purifying station.
