Die Vorrichtung zum Behandeln von Substanzen, insbesondere von Nahrungsmitteln, weist eine außerhalb des Garraumes (2) ausgebildete Kondensationseinrichtung auf, die einen Kondensationsraum (23) umfasst, der über eine Zuführleitung (24) und eine Rückführleitung (26) mit dem Garraum in Verbindung steht. In den Kondensationsraum mündet eine Injektordüse (27), die nach Art einer Wasserstrahlpumpe arbeitet und die aus dem Garraum in den Kondensationsraum (23) eingesaugten Brüden kondensiert. Der Garraum ist über einen Mischkondensator (7) zur Atmosphäre hin abgeschlossen und weist eine mittels eines Unterdruckventils (22) überwachte Einlassleitung auf, über die Umgebungsluft zum Ausgleich der kondensierten Brüden in den Garraum (2) gelangen kann. <IMAGE>
