Abstract (en)
[origin: EP1346802A2] The knife head has a top knife (4) acting with a meat support, and several cross knives (13). Several cross knives with intermediate webs are combined into a one-piece segment (15), with several segments fastened detachable via screws, next to each other on a cross bar (11). This is fixed to the knife head. A vertical stop plate (18) below the segments is distance adjustable relative to the meat support.
