Abstract (en)

[origin: EP1364582A1] Acidified milk products including desserts as well as foods containing additives such as aromas, syrups, confectionery, fruit, condiments or sweeteners are at least partially based on pasteurized milk and/or skimmed milk and/or whey starting materials which, although retaining their original content of milk- or whet-protein, -sugars, -acids, -fats, -vitamins etc, have a part of their original salt content removed. An Independent claim is also included for production of the milk products by (1) demineralizing the starting material, especially selectively with respect to sodium, chloride and potassium ions; (2) optionally mixing and homogenizing with further starting materials to set the fat- and protein-content, viscosity and especially properties such as compactness, consistency, pliability, smoothness etc; (3) heating and further homogenizing the product from step (1) or (2); (4) inoculating with an acidifying culture and ripening; and (5) finishing the product optionally with inclusion of the additives.
