[origin: WO02074897A1] The essence of the invention is continuous thickening of the must at lower temperatures in a portable apparatus to increase the content of sugar in the must without adding saccharose, including two parallel heating circular processes: 1) heating of the must for the purpose of thickening and vacuuming and liquefying of water steam by cooling; 2) compression and expansion of the cooling medium that functions as a heat exchanger. The apparatus consists of: must (1) container, suction pipe (2), filter (3), level regulator (4), vacuum column (5), steam line (6), water pre-cooler (7), vapor condenser (8), condensate (9) container, non-return valve (10), vacuum pump (11), condensate drain pipe (12), circulation pump (13), overflow valve (14), thickened must (17) container, must heater (15), nozzle (16), cooling medium compressor (18), expander (19), and fittings and interconnection pipeline. The application of the same apparatus and process provides for the continuous thickening of various fruit juices and milk beverages. For the purpose of bigger production the portable version may be replaced by a stationary apparatus.
