[origin: WO02084260A1] The inventive method for optically characterizing milk (5) with the aid of an optical system (1) comprises the following steps: the optical system is initially calibrated; at least one optical spectrum of the milk is then detected at at least one frequency; a first representation is used to image the spectrum thus obtained onto at least one color vector within a color range; and a second representation is used to image the at least one color vector onto at least one feature vector within a feature vector range. The features of consumable milk can thus be formulated in a compact manner and a high degree of selectivity can be provided, requiring little numeric complexity.
