Abstract (en)

Ximenynic acid and glyceride blends comprises (wt.%) Ximenynic acid (0.1-99.9 most preferably 2-98) originating from its natural source, or from its alkyl, glycerol ester, wax ester, or food acceptable salt; and fatty acids or glycerides, particularly triglycerides (0.1-99.9 most preferably 2-98), not akin to those present in the natural source of the Ximenynic acid. Independent claims are also included for: (1) A concentrate of Ximenynic acid or its alkylester, glycerol ester, wax ester, or food acceptable salt in a glyceride at least 15 preferably 20% wt.% Ximenynic acid or its alkylester, glycerol, wax ester, or salt, and at least 0.5 (preferably 5%) Nervonic acid or its alkylester, glycerol, wax ester, or salt, their derivative; (2) Food products comprising a health component, which is Ximenynic acid, or its alkylester, glycerolester, wax ester, or food acceptable salt; (3) Food supplements comprising Ximenynic acid or its derivative in an encapsulating material, in granules, or in powder form; (4) Extraction and enrichment of an oil in Ximenynic acid involving crushing and boiling Ximenia americana nuts with a solvent; separating the extract from the solids; removing the solvent from the oil; partially hydrolyzing the oil with a lipase, preferably with Candida rugosa lipase; and splitting the partially hydrolyzed product by physical separation techniques into a fraction enriched in Ximenynic acid and in a fraction that is leaner in Ximenynic acid; (5) Use of Ximenynic acid or its derivatives, in compound systems, particularly in food systems to improve/enhance, hardness, texture, aeration, spreadability, oral properties, mouth feel, flavor impact, color, viscosity, and easiness of processing; and (6) Use of Ximenia oil or Santalum oil or other Ximenynic acid containing oil or Ximenynic acid, or its alkyl, glycerol ester, wax ester, or food acceptable salt, to induce, quicken, increase, and/or prolong the onset and feeling of satiety in mammals.
