Abstract (en)
Liquid mixtures for ice cream are pasteurized by heating the liquid mixture (2) to a temperature below the coagulation temperature of protein substances present in the liquid mixture; and simultaneously injecting gaseous carbon dioxide under pressure into the liquid mixture in intimate contact with the liquid mass of the mixture.
