[origin: WO03048294A1] The invention relates to the use of stabilized green malt as a basic product for brewing, whereby the large amount of energy for drying and kilning the malt, i.e. about 35 KWh per ton of malt, is no longer required. Said invention also prevents the loss of about 5 % of material resulting from burning during drying (about 1%) and cleaning after kilning (about 4%). Two methods are used for stabilizing the green malt. The first method consists of exposing the green malt to a short heat shock, preferably by applying water vapor via a spiral conveyor (1). The second method consists of microbially stabilizing the malt by re-steeping the malt grains in the presence of lactic-acid bacteria at a temperature of 45 C, preferably by using a tank. By subsequently granulating the product, the wort brewed by said method can be stored for an extended period of time, making drying and kilning of the green malt unnecessary.
