[origin: WO03054024A1] The invention relates to a method for producing a pregelatinized starch that has good gelling properties, which comprises the following steps: a) producing a suspension on the basis of starch and water, b) applying the suspension produced in a) to a hot roller of a roller drier, and c) isolating the pregelatinized starch obtained in b). The starch used according to the invention is potato starch with an amylose content of at least 30 % by weight. The invention also relates to the novel pregelatinized starch so produced and to its use for producing firm gels, food items, especially instant puddings, feedstuff, adhesives and paints. The invention further relates to compositions that contain such a pregelatinized starch, especially a dry mixture for producing instant puddings.
