System for the refrigeration of a food product inside an insulated cell equipped with a refrigerating unit, a temperature measurement sensor of said food product and a measurement sensor of the temperature inside the cell, comprising an electronic control unit which controls said refrigerating unit and receives the measurements from said sensors, said electronic control unit being capable of calculating a descent index of the product obtained by measuring the temperature inside the cell and the temperature of the food product in pre-selected successive moments of time. <IMAGE>
