[origin: WO2005021695A1] The invention relates to a method for producing oil from masses of olives and/or olive components, which comprises the following steps: providing a mass from olives or olive components without removing the olive kernels; adding an enzyme or an enzyme mixture containing at least one pectinesterase in liquid or solid form; mixing the mass and the enzyme mixture; removing the oily phase from the mass using a three-phase decanter. Another aspect of the invention relates to the use of a corresponding enzyme mixture in the inventive method for producing oil.
