[origin: WO2005021705A2] The present invention relates to citrus sesquiterpene synthases, key enzymes in the production of valencene, a sesquiterpene aromatic compound. Particularly, the present invention relates to nucleic acid sequences encoding valecene synthases from angiosperm plant species, in particular citrus, vectors containing the sequences, host cells containing said sequences and transgenic plants expressing said sequences. The present invention further relates to methods of producing recombinant valencene synthase and its products, and uses thereof.
