Abstract (en)

[origin: FR2866203A1] The product is baked from a dough containing a gluten flour, at least 15 per cent water, an improver and an optional raising agent, the dough being kneaded and optionally left to rise. The dough contains 3 to 15 per cent by weight of an improving agent selected from the group comprising maltodextrins, pyrodextrins, polydextrose and oligosaccharides, on their own or mixed, and 0.005 - 1 per cent by weight of a reducing agent selected from cysteine, glutathion, deactivated dried yeast, bisulfite and proteases. The improving agent can be of branched maltodextrins with between 15 and 35 glucosidic 1-6 bonds, a reducing sugar content of under 10 per cent, a molecular weight of of 4000 - 6000 g/mole, and a molecular mass of 2000 - 4000 g/mole.
