The procedure for drying/concentrating of materials such as food products, comprises subjecting the material in a pressure container to an atmosphere with pressure reduced to an ambient pressure, condensing the water evaporated from the material, and discharging the condensate. The material is subjected to a gas stream led into the circulation. The gas stream is supplied after contacting with the material to the condenser. The gas stream is brought into the condenser with a fluid nitrogen medium in thermal contact. The material and/or the gas stream are heated. An independent claim is included for a device for drying or condensing of materials.

Die Trocknung oder die Konzentrierung von Lebensmitteln erfolgt nach dem Stande der Technik überwiegend durch Eindampfen oder Gefriertrocknung. Während beim Eindampfen wertvolle Bestandteile wie Vitamine zerstört werden, ist die Gefriertrocknung schonend, aber sehr aufwändig. Aufgabe der Erfindung ist also die Bereitstellung einer Möglichkeit zum Trocknen oder Konzentrieren von Stoffen, die gegenüber den behandelnden Stoffen schonend und zugleich weniger aufwändig ist. Erfindungsgemäß ist der zu behandelnde Stoff (20) in einem Druckbehälter (2) bei Unterdruck einem im Kreislauf geführten Gasstrom ausgesetzt. Aus dem Stoff (20) verdampfendes Wasser wird mit einer Wärmetauscherfläche (11) in Kontakt gebracht, an dem es zumindest teilweise kondensiert und abgeleitet. Die Wärmetauscherfläche (11) steht dabei bevorzugt mit einem kryogenen Medium, beispielsweise Flüssigstickstoff oder flüssiges Kohlendioxid, in Wärmekontakt.
