Abstract (en)
The method involves preheating a bake house to start the operating phase of a baking oven, and monitoring the actual bake house temperature during the operating phase of the oven. The bake house is then heated to a reference bake house temperature, when the actual bake house temperature exceeds a predetermined reference bake house threshold temperature, which lies within the reference bake house temperature. The preheating of the bake house outside the baking cycle is then stopped.

Bei einem Verfahren zum Betrieb eines Backofens mit einem umluftbeheizten Backraum, einer Umluftheizung und einem Umluftgebläse wird zu Beginn einer Betriebsphase des Backofens, in der dieser nach Bedarf Backzyklen (4) durchläuft, der Backofen erstmalig auf eine Soll-Backraumtemperatur vorgeheizt. Die Ist-Backraumtemperatur wird während der Betriebsphase auch außerhalb der Backzyklen (4) überwacht (5, 8). Die Ist-Backraumtemperatur wird während der Backzyklen (4) auf die Soll-Backtemperatur (T1) geregelt. Sobald die Ist-Backtemperatur außerhalb der Backzyklen (4) eine vorgegebene, unterhalb der Soll-Backraumtemperatur (T1) liegende Soll-Backraum-Grenztemperatur (T2) unterschreitet, wird der Backraum auf die Soll-Backraumtemperatur (T1) aufgeheizt (7). Außerhalb der Backzyklen (4) wird das Aufheizen nach Erreichen der Soll-Backraumtemperatur (T1) beendet. Es resultiert ein Backofen mit hoher Energieeffizienz.
