Abstract (en)
[origin: WO2006120380A1] A chocolate composition with a fat content of less than 16 wt % total fat. It is manufactured by mixing (i) chocolate of a higher fat chocolate composition which has been flavour developed by conching, with (ii) a chocolate ingredient or chocolate with a lower fat content than the conched chocolate of higher fat content, so as to produce a chocolate composition of reduced fat content. The mixture is pulverized to a required particle size.
