Abstract (en)
[origin: DE102006044039B3] The method involves alternatively repeating two time intervals during a cooking process. A temperature difference between two temperatures is formed according to an operation of prior fixed heat-up phase during the process. A period of one of the time intervals is selected as short interval, where the temperature difference between two temperatures in a cooking area (2) of a baking oven (3) remains constant with same and stable air volume flow (1) during the time interval. The temperatures are measured by two temperature sensors (9, 10), respectively.
