The baking oven (1) comprises a baking muffle (2), a cross-flow ventilator (3) that produces a cooling airflow with a cooling air channel (4), a vapor exhaust channel (6) that flows into the cooling air channel, an orifice area of the vapor exhaust channel directly arranged in the vicinity of the blowing region of the ventilator, at which a suction capacity for the vapor from the exhaust channel adjusts itself with a minimum number of revolutions of the ventilation wheel, and an air channel set for exhausting the mixed air flow from cool air and vapor at the blowing region of the ventilator. The baking oven (1) comprises a baking muffle (2), a cross-flow ventilator (3) that produces a cooling airflow with a cooling air channel (4), a vapor exhaust channel (6) that flows into the cooling air channel, an orifice area of the vapor exhaust channel directly arranged in the vicinity of the blowing region of the ventilator, at which a suction capacity for the vapor from the exhaust channel adjusts itself with a minimum number of revolutions of the ventilation wheel, and an air channel set for exhausting the mixed air flow from cool air and vapor at the blowing region of the ventilator. The vapor from the baking muffle is suckable through the exhaust channel. The orifice area is arranged in flow direction of the cooling airflow behind the ventilation wheel, and is arranged relatively to the ventilator, so that the suction capacity increases with the maximal number of revolutions of the ventilator. The cross-flow ventilator is arranged with a suction opening for the orifice area of the exhaust channel on an assembly part having an opening.

Die Erfindung betrifft einen Backofen (1) mit einer Backmuffel (2), wobei ein Querstromlüfter (3) mit einem sich anschließenden Kühlluftkanal (4) einen Kühlluftstrom erzeugt, dessen Abführung ins Freie erfolgt, und wobei in den Kühlluftkanal (4) ein Wrasenabzugskanal (6) mündet, durch den der Wrasen aus der Backmuffel (2) absaugbar ist. Dabei ist der Mündungsbereich (5) des Wrasenabzugskanals (6) unmittelbar in der Nähe des Ausblasbereichs (7) des Querstromlüfters (3) angeordnet, an dem sich bei einer Mindestdrehzahl des Lüfterrades (8) ein Saugvermögen für den Wrasen aus dem Wrasenabzugskanal (6) einstellt.
