[origin: EP1975517A2] The method involves introducing a steam (34) in a cooking chamber (13) during a steam phase and before a measuring phase and/or vaporizing the cooking goods (15) e.g. bread. A steam supply is terminated during a ventilation phase, after the steam phase and before the measuring phase. The concentration of the steam or moisture in the cooking chamber is reduced by the ventilation. The steam is introduced in the cooking chamber and/or the cooking goods are vaporized during the steam phase and after the measuring phase, where an evaluation of a sensor system (39) is stopped during the steam phase.
