Abstract (en)

The installation (1) has a fixed bed type deep freezing section (3) including a plating unit to plate a layer of food products (P) against a support (31) under effort of refrigerant air flow (34) at speed to obtain total freezing at a core of the products, where the plating unit is formed of a ventilation unit (32) and a refrigeration unit (33). An upper conveyor (35) sends the products towards the section (3) and a fluidized bed type deep freezing section (2), where the refrigerant air flow of the speed is raised so as to plate the products against a lower surface of a belt of the conveyor.

L'invention concerne un procédé continu pour la surgélation individuelle de produits (P) tels que notamment des légumes, dans lequel : - on forme une couche de produits, en mouvement continu, - on soumet la couche de produits à une étape de surgélation de type à lit fluidisé au cours de laquelle la couche de produits est mise en suspension dynamique sous la portance d'un flux d'air frigoporteur (23) de vitesse V1, afin d'obtenir une congélation des produits à leur périphérie, puis, - on soumet la couche de produits à une étape de surgélation du type à lit fixe au cours de laquelle la couche de produits est plaquée contre un support sous l'effort d'un flux d'air frigoporteur de vitesse V2, supérieure à V1, afin d'obtenir la congélation totale à coeur des produits. L'invention concernera également un dispositif pour la mise en oeuvre du procédé.
