[origin: CA2685110A1] The invention relates to a method for producing modified potato flakes or modified potato granulate. Said method comprises the following steps: a) po tatoes are washed; b) the peels and any dirt are removed; c) the potatoes ar e optionally cut into small pieces; d) the potatoes are optionally blanched; e) the potatoes are optionally cooled if step d) is carried out; f) the pot atoes are pressure-cooked; g) the pressure-cooked potatoes are strained or m ashed; h) other additives are optionally added as dietary fibers; and i) the obtained puree is dried. Dietary fibers are added in at least one additiona l step after step b) and before step i) and are mixed in an essentially homo geneous manner into a product obtained at that time of the process. Also dis closed are modified potato flakes or potato granulates produced according to said method as well as the use thereof.
