[origin: CA2710785A1] The invention relates to a method and a device for cutting a soft food mass, in particular for cutting cheese processed by a machine, such as processed cheese or mozzarella, wherein said food mass is provided as a wide food strip of low strip thickness, wherein said food strip is supplied using a conveyor belt at conveyor velocity to a longitudinal cutting unit, in particular in the form of a cutting roller, which cuts the food strip, using axially disposed cutting disks, into parallel longitudinal strips, wherein the rotational direction of said longitudinal cutting unit corresponds to the conveyance direction of said food strip, wherein said cutting disks each have blades provided with at least one tooth, wherein the tooth height is greater than the strip thickness, wherein the peripheral velocity of said cutting roller is set so that the tooth tip of one tooth plunges into the food strip upon cutting and causes a slit of specific slit length in the food strip, which moves in the same direction, wherein the slit caused by the following tooth adjoins the preceding slit.
