Abstract (en)
The method involves controlling intensity of ventilation of a cooking oven in dependent upon a pre-determined process data of a selected recipe, where the process data is stored in memory units. Intensity of the ventilation is diverted from pre-determined temperature-time-course, a humidity-time-course and ventilation-time-course, which is assigned to the selected recipe. Intensity of the ventilation is controlled using an opening degree of a flap or a blind that is found in a vapor suction channel and using a rotary speed of the vapor suction channel. An independent claim is also included for a cooking oven that comprises storage units.

Die Erfindung betrifft ein Verfahren zum Betreiben eines Garofens, bei dem die Intensität seiner Belüftung in Abhängigkeit von vorbestimmten Prozeßdaten eines ausgewählten Rezeptes gesteuert wird. Darüber hinaus betrifft die Erfindung einen entsprechenden Garofen.
