[origin: WO2010012640A2] In order to provide a product suitable as fat substitute in foods which can be prepared easily and cost-effectively and is acceptable in terms of nutritional physiology and with which the typical texture of fat-containing foods can be simulated as well as possible, particles of collagen material are proposed which are essentially insoluble and swellable in water, where the particles in the swollen state have an average diameter of less than ca. 150 µm. Furthermore, a process for the preparation of this product is proposed.
