Abstract (en)
The method involves extracting a sliced product (21) by a product feed system (19) along a product feeding direction by a cutting plane. The position of the cutting blade (11) is automatically adjusted relative to the product for optimizing the cutter wear. The automatic adjustment of the position takes place during the slicing. An independent claim is also included for a device for slicing of food products, particularly by a high performance-slicer.

Eine Vorrichtung zum Aufschneiden von Lebensmittelprodukten umfasst eine Produktzuführung, die ein aufzuschneidendes Produkt entlang einer Produktzuführrichtung durch eine Schneidebene fördert, in der sich wenigstens ein Schneidmesser bewegt. Die Position des Schneidmessers relativ zu dem Produkt ist mittels einer Verstelleinrichtung verstellbar. Es ist eine Steuereinrichtung vorgesehen, die dazu ausgebildet ist, zur Optimierung des Messerverschleißes die Position des Schneidmessers automatisch zu verstellen.
