[origin: EP2420362A1] The method involves cutting food products (11) using a cutting device i.e. high-performance slicer, where the device exhibits a cutting knife rotated in a cutting plane (13) around a knife axis and circulating around a middle axis. The products are individually supplied to the knife depending on information such as an outer contour and/or an inner structure of the products. Empty cuts are temporarily performed in a passive line and/or the supply of the products is interrupted while the products are cut in an active line. The products are drawn back from the cutting plane in the passive line. An independent claim is also included for a device i.e. high-performance slicer, for cutting food products.
