Abstract (en)
The device (2) has a gas burner (4) including a hollow burner body (5) supplied with an air and gas mixture by an air and gas inlet drain (6). The body has outlet openings (7) distributed on an outlet face (8) to direct the mixture to a combustion zone (9) along average combustion gas outlet direction (I-I). A vapor production compartment (10) defines a cavity (11) connected with an enclosure (3) of a food cooking oven via a vapor outlet opening (12). A liquid supply unit supplies liquid e.g. water, to the cavity. A supporting unit (15) maintains the compartment in a combustion gas flow. An independent claim is also included for a food cooking oven.

Dispositif de chauffe et de production de vapeur (2) pour chauffer et produire de la vapeur dans l'atmosphère intérieure d'une enceinte (3) de four de cuisson pour aliments. Le dispositif de chauffe et de production de vapeur (2) comporte des moyens de support (15) qui maintiennent un compartiment de production de vapeur (10) au contact du flux de gaz de combustion.
