Abstract (en)
The method involves introducing a high total heat output from a heat source (5) into a cooking chamber (2) of a cooking device (1) during an initial phase of a cooking process. A low total heat output is introduced into the cooking chamber during a balancing phase of the cooking process, where the low total heat output is a fraction of the high total heat output. An average total heating power is introduced into the cooking chamber during a terminal phase of the cooking process, where the total heating power is higher than in the balancing phase and lower than in the terminal phase. An independent claim is also included for a cooking device.

Verfahren zum Zubereiten eines Gargutes und Gargerät (1) mit einem Garraum (2). In dem Garraum (2) des Gargerätes (1) wird das Gargut über einen Garprozess (10) zubereitet. In einer Anfangsphase (11) des Garprozesses wird eine hohe Gesamtheizleistung (21) in den Garraum (2) eingebracht. In einer Ausgleichsphase (12) des Garprozesses (10) wird höchstens eine niedrige Gesamtheizleistung (22) in den Garraum (2) eingebracht. In einer Anschlussphase (13) des Garprozesses (10) wird eine mittlere Gesamtheizleistung (23) in den Garraum (2) eingebracht. Die hohe Gesamtheizleistung (21) in der Anfangsphase (11) stammt aus einer thermischen Heizquelle (5). Die in der Ausgleichsphase (12) in den Garraum (2) eingebrachte Gesamtheizleistung (22) beträgt höchstens ein Bruchteil der hohen Gesamtheizleistung (21). In der Anschlussphase (13) wird eine Gesamtheizleistung (23) in den Garraum (2) eingebracht, die höher als in der Ausgleichsphase (12) und geringer als in der Anschlussphase (13) ist.
