[origin: WO2015036240A1] The invention relates to a method for ascertaining an axial reference position of a cutting blade moving in a rotating and/or planetary manner during a cutting operation on a device for cutting food products, in particular a high-performance slicer, said cutting blade being attached to a blade head by means of which the cutting blade can be moved. The method has the steps of moving the cutting blade, which is either not rotating or is rotating at a certain rotational speed, and a cutting edge towards each other in an at least substantially axial manner relative to each other by means of an axial drive while the axial travel of the blade head is monitored; and evaluating a change of a state of the blade head, said change exceeding a specifiable measurement, as the cutting blade coming into contact with the cutting edge and as the reference position being reached.
