[origin: WO2017088928A1] The present invention relates to a method and an assembly for fermentation. In one step of the method an agent providing a substance convertible by fermentation is compartmentalized to form a multiplicity of compartments of a first kind (02). An agent which effects the fermentation is also compartmentalized to form a multiplicity of compartments of a second kind (03). The compartments of the first kind (02) and the compartments of the second kind (03) are arranged in a dispersion medium (01) which preserves the compartments of the first kind (02) and the compartments of the second kind (03) and allows mass transfer at least with the compartments of the first kind (02) or with the compartments of the second kind (03). Conditions to allow fermentation in the dispersion medium (01), in the compartments of the first kind (02) and/or in the compartments of the second kind (03) are produced and the substance convertible by fermentation is therefore converted into a fermentation product.
