[origin: WO2017009080A1] The present invention relates to a process for preparing a fermented milk product which comprises 4 to 15 wt/wt % of protein, comprising a. contacting milk with an enzyme having carboxypeptidase activity; b. contacting milk with a composition comprising lactic acid bacteria. The invention further relates to the use of an enzyme having carboxypeptidase activity to increase fluidity of a fermented milk product.
