[origin: EP3424400A1] Operating method of a professional tunnel dishwashing machine (1) comprising an outer casing (2) having a longitudinal horizontal pass-through tunnel (3), inspection doors (5) selectively openable to access corresponding sections of the tunnel and a linear conveyor (4) adapted to advance dish racks (100) along the tunnel; the tunnel having a washing station wherein first nozzles direct jets of washing liquid against the racks moving above a first collecting basin and a rinse station wherein second nozzles direct jets of rinsing liquid against the racks moving above a second collecting basin; the method comprising the steps of producing/creating/preparing a descaling solution inside a tank communicating with the second nozzles and feeding the descaling solution also to auxiliary nozzles located inside the tunnel and orientated so as to direct corresponding jets of descaling solution against the inspection doors to remove the scale present on the inspection doors.
