A control hydraulic hinge for cold stores comprising a stationary support structure () and at least one inclined door-leaf () moveable between a door-leaf open and door-leaf closed position. The hinge comprises a hinge body (); a pin () mutually coupled with the hinge body () to rotate around a first axis (); a cam element () integrally joined to the pin (); a slider () slidable along a second axis () comprising a cam follower element () interacting with the cam element (); recovery elastic means () acting on the slider () to recover the initial position. The cam follower element () has a suitable shape, so that the door-leaf () has a substantially constant opening and/or closing speed.
