[origin: WO2019073159A1] -The invention relates to a process for producing yoghurt using an electric domestic yoghurt maker (100) with fermentation in a wet environment, wherein said electric domestic yoghurt maker (100) comprises at least one container (2) capable of receiving a milk-based preparation, a chamber (1), and an electric heating device (4), said process comprising an initial heating phase for admitting steam into and/or generating steam in the chamber (1) so as to raise the temperature of the preparation contained in said at least one container (2) until a temperature below the coagulation temperature of the preparation is reached, and a subsequent heating phase for continuing to raise the temperature of the preparation contained in said at least one container (2) and initiating the coagulation of the preparation contained in said at least one container (2). -The invention also relates to an electric domestic yoghurt maker (100) with fermentation in a wet environment, using the abovementioned process.
