[origin: WO2019197198A1] The invention relates to a method for producing an oil-in-water (O/W) emulsion, involving the following steps: a) providing an oil phase and a water phase, b) pre-mixing the oil phase and the water phase to obtain an O/W pre-emulsion, and c) homogenising the O/W pre-emulsion to obtain an O/W emulsion, with the aid of at least one counter-jet dispergator. The invention also relates to an O/W emulsion and to an installation for producing an O/W emulsion.
