[origin: WO2020099792A1] The present invention relates to a method for producing an ingredient containing a combination of at least three milk proteins, said method comprising i) mixing, by liquid process, micellar caseins A1, milk serum proteins B1 and denatured milk serum proteins C1, the milk serum proteins B1 being different from the denatured milk serum proteins C1, and a step ii) comprising a step of applying at least 50 bar to the mixture obtained in step i), the ratio of the dry weight of micellar caseins A1 to the weight of the total nitrogenous matter (MAT) of the ingredient being greater than or equal to 50%; the ratio of the dry weight of milk serum proteins B1 to the weight of the dry extract of the mixture in step (i) is greater than or equal to 5%, and less than or equal to 35%; the ratio of the dry weight of denatured milk serum proteins C1 to the weight of the dry extract of the mixture in step i) is greater than or equal to 5%, and less than or equal to 45%; the ratio of the dry weight of fat to the total dry weight in the ingredient is between 0.2% and 6%. The present invention also relates to the use of the ingredient associated with the method for producing a dairy product, and the dairy products comprising the ingredient according to the invention.
