[origin: CA3127416A1] A first variant of a method for producing ghee (1), the method comprising the following steps: a. providing cream (2) or milk, in particular whole milk (10) or raw milk; b. churning (100) cream (2) to form butter (3) and buttermilk (6); c. melting (200) the butter (3) and heating the melted butter to a temperature of 45°C and 90°C; d. phase inversion (800) by means of shearing; e. concentrating oil by means of centrifugal separation (300) into an oil fraction (4) and a serum fraction (5); f. boiling (400) the oil (4); and g. supplying (600) at least one milk product; h. clarifying (500) the boiled oil (4) to provide ghee (1) having a fat content of at least 99.0 wt.%, and/or a second variant of a method for producing ghee (1).
