The device is also provided with a movement device (7) which moves the baking press units (1) at least periodically in a transport direction, a filling station (5) at which a dough to be moulded is filled into the baking press units (1), as well as a control unit (8) which at least periodically creates a control signal and transmits same to at least one control element (4), such that the upper and/or the lower moulds (2, 3) are moved at least periodically by the control element (4) in such a way that a relative movement running along a straight movement direction is initiated between the upper and lower mould (2, 3), and a dough arranged in a baking gap (9) formed between the upper and the lower mould (2, 3) is applied with pressure by the upper and the lower mould (2, 3). The described device is characterised in that the control unit (8) is designed to generate the control signal in such a way that a route travelled by the control element (4), a time period in which a force is transmitted from the control element (4) to the upper and/or lower mould (2, 3) and/or a pressure force, which is exerted by the control element (4) on the upper and/or lower mould (2, 3) and/or by the upper and/or lower mould (2, 3) on the dough arranged in the baking gap (9), can be adjusted in a targeted manner.
