[origin: WO2021001756A1] Present disclosure relates to a two-step fermentation process for obtaining cellulose and gluconic acid. The present two-step fermentation yields bacterial cellulose in first stage of fermentation and gluconic acid in second stage of fermentation. The produced bacterial cellulose and gluconic acid may be used in many industrial applications. Here, the process includes a first stage fermentation process for obtaining cellulose and a residual first stage broth. Similarly, a second stage fermentation process provides predetermined level of gluconic acid.
